Chef's knife with VG10 blade and olive wood handle - Wusaki

VG10 is a Japanese steel appreciated by the Japanese cutlery industry for its high percentage of carbon which gives it a hardness of 59-60HRC.
Its sharpening allows it to obtain a razor sharp edge, the carbon also allows to maintain the edge in time, to space the sessions of sharpening.
The top part has been hammered and each knife is a unique piece.
The chef's knife keeps its edge 2 to 3 times longer than a European steel knife. A manual V-sharpening is done on each knife with a leather strip for a perfect cut from the first use!
The handle is made of olive wood, a noble wood that is very pleasant to the touch, it has been sanded and then treated for greater resistance. Each handle is unique thanks to its grain and the grip is perfect.
The pommel is engraved in Japanese, a character representing the "Tiger".
