KAI Damascus Ham Knife | Shun Classic White - DM-0704W

This Kai Shun chef's knife is part of the Classic White series, which combines the age-old forging of the Japanese samurai with modern, sophisticated manufacturing processes.

The blade, ground on both sides, is made of VG MAX steel with a hardness of 61 (±1) HRC and is surrounded by 32 layers of Damascus steel. It is this combination that gives the blade the long-lasting sharpness and durability that Kai is known for.

Unlike the dark handle of the original Shun Classic series, the handle is made of ash colored Pakkawood. This is not a specific wood species, but a general term for laminated wood veneers bonded with high quality resins. This gives the handle its stability and endurance.
