A paring knife is a small, smooth-bladed, general-purpose knife ideal for peeling (or "paring") fruits and vegetables, and for other small, intricate jobs (such as deveining a shrimp, removing the seeds from a chili pepper, "skinning" or cutting small garnishes).
Peeling knives are typically 6 to 10 cm (2½ to 4 inches) long. Another way to peel vegetables and fruits is with a peeler.
