Kai Shun adapts the age-old forge of the samurai to make exceptional Japanese knives for the modern kitchen.

Made from an exclusive 68-ply VG-MAX Damascus steel, the blade of this knife is designed to give you smooth, precise cuts. This exclusive material, available only from Shun, has an extremely fine grain to make the most of the steel, and its excellent construction also ensures a sharp, durable blade in any kitchen environment. Corrosion and wear resistant, this knife is also constructed with a full composite tang for superior balance.

In addition, the Pakkawood handle provides a comfortable and secure grip for both left and right handed users. It is also extremely durable and will not crack or separate from the blade, extending the life of your knife.

The perfect addition to any chef's equipment, this knife features a large 16 degree square blade edge. The size of the blade lends itself well to chopping large vegetables such as cabbage, but is versatile enough to chop and slice meat if needed. The flat portion of the blade is also perfect for crushing foods such as garlic cloves. The blade is also double beveled and ground at a 16 degree angle on each side to provide the best possible performance from each blade.
